A Fruity Wedding Cake
Fruit-lovers rejoice: There are several ways to use gorgeous, delicious fruit as part of your wedding cake. For instance:
In the Batter
You can select a cake that places fruit directly in the batter. Examples would be sponge cake filled with strawberries, or vanilla pound cake filled with apples or pineapples. Or if you want something more subtle, consider having a banana cake or orange-chocolate mud cake. Some brides even choose to serve cheesecake infused with fruity flavors, such as raspberry, lemon, and key lime.
In the Filling
Another way to use fruit, and which adds to the look of the cake, is to incorporate fruit in the filling between the cake layers. Instead of having a plain butter cream filling, have your baker mix fresh strawberries into the butter cream and spread between a light sponge cake. Or, replace cream fillings with your favorite jam, such as apricot preserves. Banana custard also works wonderfully with vanilla cake, as do tangy citrus fillings between light lemon chiffon cake.
In the Decor
Finally, for aesthetic value, use your favorite fruit as decor by separating tiers with fresh berries or adorning the outside of your cake with small sugared grapes, strawberries, and cherries. Finish the cake table off with flower petals surrounded by dainty Seckel pears and lady apples.
