Luscious Filling
A wedding cake cannot be imagined without a tasty and deliciously attractive filling with pastry or lemon cream of various flavors. Very often the quality of filling of a wedding cake determines the feeling of the participating guests especially the one with active taste buds.

Pastry Cream Filling
It is a delicate yet rich and ideal filling for a wedding cake. This kind of filling can be made very diverse with varying flavors. The ingredients are flour, salt, sugar, whipping cream, whole milk, egg yolks and pure vanilla extract. The process is to mix the flour, salt and sugar in a pan and blend the mixture with the cream. Then the mixture is stirred constantly in medium heat until the mixture becomes sauce like dense. A little of this sauce is then mixed with the egg yolks and cooked in low heat till thickened. After removing from heat vanilla is added and the mixture cooled quickly. The mixture needs to be brushed with melted butter to prevent formation of skin and stirred for some time before using.

Chocolate Filling
Unsweetened melted chocolate of around two ounce is added to the pastry cream along with vanilla to make the chocolate filling. When extra strong fresh coffee is added to the mixture reducing the amount of milk and cream, it is called Mocha Filling.

Lemon Cake Filling
The ingredients in this filling are sugar, cornstarch, salt, cold water, slightly beaten egg yolks, grated lemon peel, medium lemon juice and butter or margarine. The process is to mix sugar, cornstarch and salt in a small saucepan. Then water is added gradually with whipping till the mixture is well blended. Then egg yolks, lemon peels and lemon juice are mixed. The blend has to be cooked with constant stirring in medium heat till it is bubbly and thick. Thus boiling for a minute, it is removed from heat. The mixture is stirred in butter and afterwards cooled to room temperature without stirring.
